Dairy Alternative: Silk Coconut Milk

I’m not affiliated in any way with Silk or its parent company, Danone North America. That said, I may be biased toward the brand as evidenced by my recent blog posts about its plant-based milk products.

Unlucky in my attempts to match soy milk and almond milk with tea, I’m entering the next phase of my search with Silk Unsweet Coconutmilk.

Coconut milk dates back further than other plant-based milks and is widely used in Southeast Asian cuisine. Because of its high percentage of saturated fat, heavy consumption is discouraged.

I’ll get straight to the point. Coconut milk does not work well in English tea (though it’s widely used in sweetened boba tea). Raise your teacup to your nose, and you’ll understand why. All you can smell is coconut.

This experiment wasn’t a complete bust though. Coconut milk makes a great foundation for smoothies. So I’ll leave you with a recipe I perfected in my NutriBullet this week.

Healthy Vegan Tropical Smoothie

Healthy Plant-Based Tropical Smoothie

Ingredients:

  • 1-2 cups of spinach
  • 1-2 cups of frozen pineapple (you may throw in a few chunks of frozen mango too)
  • 1 tablespoon of flaxseed meal (optional)
  • 1-2 tablespoons of plain soy yogurt (or substitute your favorite yogurt)
  • 1 banana (optional)
  • 1 date for added sweetness (optional)
  • Enough coconut milk to cover the ingredients

Blend the ingredients to your desired consistency and enjoy. Spike it with rum if you’d like. Now close your eyes and imagine yourself on a Caribbean island.
